Rocket Menus: Spring Summer 2025
With blossom season underway and the imminent promise of longer days, we are delighted to unveil Rocket’s Spring Summer menu – a true celebration of the season’s freshest produce. Meticulously crafted by our expert culinary team, this season’s menu pays homage to a wealth of British produce, celebrated at the height of their seasonality. Featuring reimagined modern classics alongside captivating new creations, these vibrant dishes are the perfect accompaniment to the season’s celebrations. Here, our events team share some of their favourites for the upcoming season, along with suggested wine pairings from co-founder and director Michael Symonds.
Yellowfin Tuna & Tomato Tonnato
To start
A stunning pairing of sustainably sourced Cornish yellowfin tuna from Flying Fish Seafoods and delicately macerated West Sussex heritage tomatoes, beautifully complemented by a rich tonnato sauce, pickled red onions, and shiso vinaigrette. A perfect balance of umami and acidity, this starter is already a favourite amongst our team.
Pairs beautifully with crisp white Italian wines such as Gavi di Gavi 2023, Vermentino Melacce 2024, as well as light Mediterranean wines.
Wykham Park Asparagus
We’re delighted to work with First Choice Produce for this show-stopping vegetarian starter celebrating the finest British grown asparagus. Pairing crisp Wykham Park asparagus with a silky wild garlic gribiche and jersey royals topped with toasted panko and chives for a beautiful medley of colours and textures, this starter has stolen Head of Events Holly’s heart.
Pairs wonderfully with white wine with citrus and floral notes such as Le Petit Bourgeois 2023, Domaine Henri Bourgeois, and Sancerre ‘Silex’ Vincent Grall 2023.

Fillet of Hereford Beef

A show-stopping centrepiece for any spring gathering, our tender fillet of 28-day aged Hereford beef, is served alongside crisp pomme anna, braised spinach and truffled gem lettuce topped with shallot rings. A vibrant chive emulsion and a rich red wine reduction combining port, red wine, veal and caramelised vegetables provide the ultimate finishing touch.
Pair with complex, full bodied red wines with floral notes such as Château Le Coteau 2018, Bolgheri Rosso 2023 or Barbera d’Asti ‘La Tota’ 2022.
South Coast Stone Bass
Already a firm favourite amongst our team, our South Coast Stone Bass is served on a delicate bed of kale and alongside a golden pan-fried nori potato terrine. A bright green peppercorn sauce and zesty lemon purée are delightfully contrasting and complementary final notes.
Pair with wonderfully crisp French white wines such as Sancerre, Chablis or Montagny varieties to complement the perfectly prepared Stone Bass.

Chocolate & Hazelnut
To end
A glorious tribute to the iconic Amalfi lemon, this dessert is as visually striking as it is delicious. Beautifully crafted into the shape of a lemon – a fluffy layer of lemon and poppy seed sponge is topped with a zesty lemon compote and ensconced in a light lemon mousse. Complemented by a rich blueberry sauce, the contrast of tart and sweet creates a perfectly balanced bite.

Peach Melba Pavlova
A whimsical reimagining of the classic, our peach melba pavlova is a beautifully balanced ode to summer’s finest fruits. Crisp peach infused meringue is topped with delicate vanilla crème patisserie, ribbons of poached peach, raspberry vinegar jelly and a dusting of raspberry powder. Light yet indulgent, the epitome of summer dining.
